# 23 Jersey Wonders

I had initially put "Make Jersey Wonders" on the list, but, really, who am I kidding. Some things are best left in the hands of the experts so I soon switched "Make" for "Eat".

Jersey Wonders are a local delicacy similar to a doughnut but less sweet and more deep-fried. They're a bit of a hard sell to be honest and, on the whole, it seems that you have to be Jersey born and bred to truly appreciate these greasy, almost-certainly-really-bad-for-you, balls of dough. "Wonder why you eat them" is a popular comment from non-fans.

Now, ideally, these should be freshly made in front of you, preferably by someone in local costume and a bonnet. However this variety can be hard to come by in which case you'll need to source one from a farm shop, or in my case this time, from the Vienna Bakery in the market.

Note - this picture was taken a couple of years ago - they are now 68p!

You know you're on to a winner when your pastry does this to its paper bag.

See-through thanks to all the grease!

A quick warm in the oven and you're good to go.

Lovely (if you're from Jersey)!
